as per title - i'm keen to switch accounts to take advantage of the offers available, in this case to M&S banking. however, i'd like to retain my ability to use the regular saver account with my current provider.
as i understand it, switching closes my old accounts. how can i circumnavigate this?

Open another account with your current provider first.0

If you're wanting a switching incentive, all those currently offering such incentives demand you use the CASS, which means the old account is closed.
The workaround is to switch another account. If you don't have one, get one.0
