    Lambs liver, or lambs fry, as I've always known it[kiwi moi]should never be down-graded to a pet food.

    op - it is mild and gorgeous.

    As harry's nan says, do bacon in pan first, then add onions which you've already pre-zapped in m/w to soften. This little cheat step is really worthwhile. Throw a bit of flour, seasoned if/as you wish[grind in some black pepper, some fines herbes if you're &] in a bag. Add the liver. Chuck it all about to coat this delicacy which is indeed foie d'agneau.

    Rest the onions and bacon in a dish while you top up the pan with a bit of butter, some olive oil. Now use fierce heat to quickly seal the slices on all sides. Back in go the bacon and onions. Mix everything about and slosh in some veg. water or end of red wine...anything you have.

    The coating flour+liquid of choice forms a divine sauce/gravy. Don't overcook this quick easy dish.

    Have your mashed taties etc. ready.

  • We make a casserole with it - fry some chopped up bacon with a couple of sliced onions until starting to caramelise. Add liver chopped into chunks. Cover with beef stock (or couple of stock cubes and water) and add in some garlic and herb seasoning, Worcester sauce, tomato sauce, black pepper, salt if needed, a dash of honey and a spoonful of Bovril. Simmer for a good half an hour, add some frozen peas and thicken gravy if it looks thin with a couple of heaped teaspoons of cornflour slaked in a little water. I promise you, it'll be lush - serve with a big pile of mash.

    I love liver and it's with onions and gravy and mash. I think it must be a marmite thing.
    Why pay full price when you may get it YS ;)

    Completely untrue, any wild, feral, raw fed or non raw fed cat that likes to hunt and eats what it kills eats liver. It is an essential part of their diet and should make up 5% of the overall diet if raw fed.

    Sorry to high jack the thread, I don't like liver myself so can't offer tips on how to prepare it, I only buy it for my raw fed dogs.

    i adore lambs liver! fried fast with onions and mushrooms, served with mash veggies and lashings of gravy....beautiful and cheap too!!! i agree pigs is tougher and stronger on flavour and ox even more so.

    Mock Goose

    Lay liver in casserole dish with small amount of stock. cover with a layer of stuffing lay rashers of bacon on top. Bake 40 mins.
