    I'm thinking yoghurt, fruit and granola might be a good thing to try.

    Eggs sound lovely too.

    I often make extra pancakes at weekend and put them in the fridge for mon or tue brekkie.

    TBH most breakfast items can be cooked the night before and stuck in the fridge for a quick reheat the following day.

    I don't just mean thin crepe type pancakes, but you can make thick scotch/american style ones that are great hot or cold, make them and just a quick go in the toaster to warm through.

    An easy recipe is one mug of self raising flour, same mug of milk or water and one large egg whisked together tomake the batter. Can add a bit of sugar or if more natural sweetener is wanted grate in some apple or pear (as per Mr oliver) or throw in some bluberries or dried fruit.

  • I bake my porridge with milk adding some chopped tinned pears or blueberries, splosh of vanilla extract, some sultanas and some cinnamon. When baked, about 30 mins sprinkle my demerara and grill. Delicious.

    I like egg bakes for when I'm on an early start. If I can resist the temptation to load up on toast, as I always crave refined carbs if I don't have enough sleep! Otherwise, this is my go to breakfast: For the two of us I mix about a dozen eggs, couple of grated carrots, a grated courgette, a little dried rosemary and salt and bake in the over on gas 6 until cooked. Its like a quiche without the pastry. Let it cool and cut into portions - 6-8 servings. Keeps in the fridge for a few days worth of breakfast to grab and go, i eat it with hot sauce. We're pretty active so quite big eaters, if weve been very hungry or very busy at work I will mix in some cooked sausage as well. Also, I line the baking tray with baking/waxed (?) paper, saves on washing up and the eggs never seem to stick to it.

    Slice of bread, bit of butter, ham and tomato. Quick to make and very filling.
  • Problem with fruit and cereals is that they can cause spikes in glucose - I just end up eating more in a couple of hours. I'd be going for eggs or something with protein in it - ideally little bit of protein + lots of veggies. I make up silicon cup cake cases, fill them with veggies and then top them up with raw/whisked eggs and bake for 15-20 minutes till set. I make enough up for a few days so I'm not scrambling when I'm tired or don't have time.

    I add the smallest bit of something strong tasting - e.g. smoked salmon/goats cheese / ham / sun dried tomatoes. Without that I find them a little bland.

    At 5.00am have whatever you want! by lunchtime all those calories will be burnt off!
    I am not a breakfast person and cant tolerate wheat - don't like porridge- but will nibble on cold boiled eggs. or ryvita with loads of butter and jam. but one breakfast I do enjoy is sausage with tinned tomatoes.
    (I keep cooked leftover sausages in the freezer for this brekkie and if I know I can use most of the tin of tomatoes later I will make this.)
    its sort of a 'treat' breakfast for me.
  • I often do this one - basic idea nicked from Hugh FW!

    On abaking tray spread a handful of porridge oats - sprinkle over a little demerea (sorry spell check no help but you know which one I mean!). Toast under grill - keep an eye as it burns easily. on a another tray arrange any nuts you fancy - I like pecans and almonds - and once porridge mixture has crisped put the nuts under to grill and crispen. Put all into serving bowl - add half a handful of what ever dried fruit youlike/have in. Pour on cold milk! Here you control sweetness levels so its up to you. But better for you than commercial serials!:j

    BTW I also make batches of a American Pancakes which freeze really well - but freeze em separately so they dont stick together!

    One of my favourite breakfasts is cottage cheese pancakes. I know it sounds odd but knock it until you try it. They're high in protein, low in fat and sugar and keep you feeling full all morning. The mixture can also be made the night before and kept in the fridge to save time.

    For 1-2 servings mix half a cup of cottage cheese with half a cup of rolled oats and 3 beaten eggs. Cook a ladle full of mixture in frying pan just as if you were making American pancakes. I like to cook mine in coconut oil and sprinkle cinnamon powder on.

    Other days I'll have poached or scrambled eggs with spinach and cherry tomatoes or sliced avocado or fish (usually mackerel or salmon fillet).
