hi, ive bought 4 YS bulbs of fennel, does anyone have any good recipes so i can use it up please? thanks

The best fennel I've cooked was using an Ottolenghi recipe. Essentially it was sliced fairly thinly, then cooked in a bit of butter with a touch of sugar and fennel seed - it caramelizes. A bit fiddly, but so good!

There is also a good appetizer of thinly (think paper thin) sliced fennel and segments of a grapefruit (a bit of juice makes for a dressing, and you can sweeten it with sugar if you like). I think this one was by Rose Elliot. Again, fiddly to remove all that white membrane from the grapefruit bits, but imho worth the effort.0 -

I throw it in salads. Slice finely, add to the bottom of the salad mixing bowl, add a tablespoon of an acid (lemon juice or vinegar) and then mix as normal. It gives a lovely fresh crunch so the salad.
If it's in decent condition it'll live in the crisper drawer of the fridge for a week or more.

I like it in a coleslaw finely sliced with red cabbage, red onion mix with either Mayo or EVOO and grain mustard - yummm...Note to self - STOP SPENDING MONEY !!

thanks everyone. im putting a thinly sliced layer of fennel on bottom of slow cooker tomorrow, popping in a little YS gravy and adding a YS half shoulder of lamb, bet that will smell fab at the end of the working day.xx0

Seriously I can't abide it so even if it were given to me I'd not take it. And it proves to me a us bargain is only that if you know you like the product and can work it into the meal plan0 -
Seconded for finely diced in a salad.
Only use a little bit as it can be quite strong - it goes well with citrus.
It's also nice in a roast - goes well with rosemary, or if you ever fancy making pizza.That sounds like a classic case of premature extrapolation.

I slice it thinly, put it with onion and pork steaks and braise slowly in some chicken or veg stock in a casserole. I'm not keen on raw fennel because of the aniseed taste but it's much nicer when cooked.0

I made lovely side dish with it, I can't find it via Google but it was sliced white cabbage, sliced fennel and smoked bacon lardons stirfryed and then cream added at the end.
