I cooked a chicken last night for tonight's dinner as I don't get home in time from work to actually start from scratch tonight.
What can I have with it besides salad (as I would have to go and buy all that stuff after work)? I'm not sure spuds and peas would go with cold chicken which is what I would normally have with a roast chicken.

Make a potato, chicken + pea salad! Cook the pots and peas, chop the pots, add in some mayo, yogurt, chopped onion, garlic, mustard or chili or curry powder. Stick in some of the chicken and eat. Mango chutney with the curry powder if you've got it....... and make enough for lunch tomorrow!0

Make a sweet and sour with the left over chicken. Just make sure it's really hot before eating it.
Or you could make a chicken pie - do you have any mushrooms or sweetcorn to go in with it?
Or a basic chicken curry

You could still have your spuds and peas as you can reheat chicken once. Just take the bit you will eat off it then microwave them or wrap them in foil and put them in the oven (you can put a bit of gravy on it to keep it moist).
Don't re-heat the whole chicken or you will end up with wastage.0 -

So, what did you have for dinner?
I had the same dilemma tonight, and went for chicken and salad with honey mustard dressing...
I also recommend throwing it in paella.Errors of opinion may be tolerated where reason is left free to combat it. - Jefferson0
