Hi there I have replied to your email with the recipes let me know if you get it OK .
When my children were small they liked to flavour onions gave food but not the texture so I bought some onion salt and used it in pies and minced meat dishes until they got used to it then gradually brought small bits of grated onion in a small bit at a time until they became used to it.Did the same with mushrooms.
Grated carrot very small can help to bulk out minced meat along with a handful of oats or lentils and if the gravy is thick enough it won't be noticed under mashed potato I always make my gravy with two Oxo cubes and a desert spoon of Bisto powder so its nice and full of flavour and quite thick. A lot of the time its the texture rather than the flavour they aren't keen on

Yes thank you very much Jackie O, its a great recipe email book you've sent to me.
So far so good, last nights fajita/piri piri dinner was a hit with hubby even though I didn't get all my spices out. that's why I am pleased with myself, if anything is only half used I store it incase I use the rest later on.
Today I have put the diced lamb In the slow cooker but as it was only a little tub of meat I have added one potato and some carrots to the rhogan josh curry I have made from scratch.
I am not at work till 1pm today, so I will have time to sort a few things out.
As well as this worry and getting through the month, i have my tax return to do before the 31st of jan. I've never done it before but I have been reassured its fairly straight forward? I only had 3 clients last year in my first year and now I have between 10-12, I am proud of myself for that and I am starting to grow bit by bit, but I am sure with everyone's tips and recipes we will get through this tough time.

I hope half way through the year we can start putting some money to one side and finally take our honeymoon (we are coming up to our 4th anniversary) just a cheap weekend in spain?

Anyway Thank you so much for being understanding and willing to help usxxx

  • I love Mac n cheese.
    And cauliflower cheese.
    And cauliflower Mac n cheese.
I save on cheese by putting two teaspoons of mustard in the sauce. Don't know why, but it makes the sauce cheesier.

I love garlic bread but when I am really skint (often) I stick a whole clove of garlic in a little dish of butter and leave it in the fridge. I then spread it on bog standard toast. Because I am posh I cut the toast into triangles.
I have been known to have garlic bread for breakfast. Much to the disgust of workmates.
  • funnily we have just had honey and mustard chicken with homemade chips and broccoli and the honey and mustard mixture called for 3 cloves of garlic.

    Hit with the kids!!!!!!

I bet my breath stinks now? but I do put garlic in lots of things and hubby moans but loves the taste.

There are few things better than home made chips.
A chip sandwich in cheap white bread is truly a thing of beauty.
  • So many lovely cheap meals that can be eaten at any time, not just a tough month - it's a nice chance to try new recipes and combinations. Some of our favourite cheap/easy family meals were discovered in our toughest months. Hehe.
    Here's some of our favourites:
pasta and cheese sauce with a sliced up sausage or two, a handful of mushrooms or any frozen veg or garlic toast on the side...or a meatball or two leftover from bolognese chopped up to make little meaty 'nuggets'

    Cauliflower cheese

    Quiche

Omelettes with pretty much anything we have/like

    Fishfinger sandwiches

Nachos (the value salted ones) with cheese and whatever we have that will make them tasty leftover in the fridge...finely chopped onion, cooked mushrooms, chopped toms make a nice lunch

    Soup in all it's forms

Roast with sausages, yorkies or stuffing as the star

    Faggots, mash and beans/veg

    Sausage rolls, mash and beans/veg

Ham (or any cold meat) egg and chips....and by the absolute end of the pot....just egg and chips. Still yum!

...can you tell we like carbs? hahahahaaha

All the best to you. x
  • It was the same for me. I was really skint so I revisited the things we had as kids.

    Cheese and potato pie/tinned toms.
    Corned beef hash.
    Bubble and squeak.
    Fried onion sandwiches.
Soup in a bowl with a mashed potato island..
    Cornish pasty/beans.
    Fried eggs on toast/sandwiches.
    Toad in the hole.
    Split pea soup.

I couldn't afford to eat out or have takeaways. So I looked at me takeaway menus and turned to YouTube to learn how to make them.

    Chicken madras/dhansak/bhuna/jalfrezi/balti/pathia etc etc
    Mushroom bhaji/Bombay potatoes/aloo Gobi/Saag aloo.
I get all my curry recipes from Al's kitchen on YouTube.
I get three pizza size garlic and coriander naans from my ethnic supermarkets. Three for a quid.

Of course, I could buy huge bags of value pasta, buy flour and make my own bread. But pasta and bread are my least favourite things.

I, not events, have the power to make me happy or unhappy today. I can choose which it shall be. Yesterday is dead, tomorrow hasn't arrived yet. I have just one day, today, and I'm going to be happy in it. :)
