Hi lincoln-potter - it's up to you really!
Usually the target is there as group motivation to reach a goal over the rest of the year rather than to track what you've already done, but there aren't really any hard and fast rules. If you are limited by your mortgage OP cap then we have a fair other people who also have various constraints on what or how they can overpay, and so count things like savings to offset or OP later, so if you'd like to join in you could always track those - doesn't have to just be actual overpayments.
I would ordinarily but most of the savings currently are being ploughed into other things like the garage build or the upcoming wedding. I'll stick my name down for next year once I have fewer "large ticket items" to pay for.
