  • Hi everyone- there are some reallygreat ideas here. I would just add that you can get a small tin of sardines at Netto for an amazing 18p and they are mega healthy and good for sarnies. Also, rather than cheap mince,use better mince at half the quantity and then Half soya mince(99p for organic dried soya mince at Tesco) this will make for a healthier protein component. Bananas and apples are quite cheap, as is a litre of orange juice- value of course. Good luck and I hope you enjoy your new job.

    Hmmmm Own brand tins of potatos... I actually use them a lot for emergencies :) The other day I took some and put them in tin foil with frozen peas and some tinned sweetcorn and a knob of butter. Chucken on the BBQ with the banana's in tin foil with some yorkie chocolate and a lid full of morgans spiced rum yuuuuuuuuuum. Anyway back to the potatos...
    Take some butter and melt in a frying pan - add chopped onion and cook till see through, add chopped tinned potatos and fry till they start turning brown. Serve with tomato ketchup and maybe sausages? I often cook this with some chopped sausage - either the hotdog sausages from tesco or a choritzo style sausage chopped up and fried with the potatos.
    Another cheap meal with tinned potato's is based on Hugh Fernley-Whittingstall's dish using fresh potato's... Fry some courgette in a pan till soft. I like adding onion too for flavour. Add the tinned potato's and fry for a bit. Now add eggs. I tend to aim for filling my frying pan to within 1/2 to 1 cm from the lip once everything is in. You could also add some spinach in the middle... frozen spinach from Tesco works out quite cheap...
    Cook gently till the middle is just starting to set (bear in mind everything is hot so when you add the eggs that should help set them) flip the omelette/tortilla or whatever it's called and just let it fry a little on that side too to finish it off... :) VERY filling :)

    There is also a dish which in Denmark is served up at christmas with your main meal... it's called browned potatoes but is in essence charamelised potatos. It's a national past time to argue over if you should use tinned potatos or home cooked and peeled mini potatos... personally I use tinned.
    You basically take sugar and butter and heat up in a pan till starting to turn brown and then add your potatos (drained) and cook slowly till potato's are nicely coated and there are no more lumps in the sugar.
    It's a bit more technical than that - so if you want me to translate the recipe let me know :)

    i can't do the whole menu but would say that frozen veg is very reasonable (less than £1 for a big bag) and would do all week, though you may get a bit bored.
