2 bits of advice needed - muesli and sponge pudding

Firstly, I have heard about people soaking muesli overnight. What in? Milk? Apple Juice? Why? What is the benefit - is it nice? Does it need to be refridgerated?

Secondly - a friend of mine used to make a super quick jam / syrup sponge pudding in the microwave - does anyone know how please? (bear in mind I need idiot instructions!)

    If you click on the blue Add a Recipe in my signature you'll find the last two posts are Sponge Puds and Suet Puds (as of today 13th May)

    As for muesli...? <shudder>

    Firstly, the only time I've come across soaking muesli is in tea to make cake (link HERE). Porrige oats can be soaked in milk a la Jamie HERE to make your own muesli

    Sponge pudding, you're too late :D I just asked Curry-Queen and she very kindly posted loads of suggestions on the recipe thread (see in my signature) EDIT - as Squeeky said, sorry Squeeky ;) I must remember to read posts properly and not just scan read.
    When life hands you a lemon, make sure you ask for tequilla and salt ;)

    This one's not bad!

    Steamed sponge pudding (Microwave recipe)
    Ingredients
    1 oz margarine
    1 oz sugar
    1 beaten egg
    2 oz self raising flour
    2 tbs jam

    Method
    Place the jam in the bottom of a small basin. Beat all the other ingredients together and spoon over the jam. Cook on medium power in the microwave for 2 1/2 to 3 minutes. Leave to stand for 3 minutes before turning out.
    You can also use marmalade or golden syrup

    I could make it better myself at home. All I need is a small aubergine...

    I moved to Liverpool for a better life.
    And goodness, it's turned out to be better and busier!

    Couldnt find a receipe for Muesli but the ones I like are 45% fruit and nuts so it seems cheaper to buy a buy than get all the ingredients seperatley.

    Muesli



    I stayed overnight at a long-lost friend's house many years ago. She asked me if I would like muesli for breakfast - Alpen had only just become available in this country so at least I knew what it was.

    I said yes.

    The next morning she put in front of me a bowl filled with something resembling vomit. (apologies if anyone is eating):o

    It was muesli that she had soaked in orange yoghurt the night before and chilled in the fridge.

    But it tasted delicious and the fruit swells and the nut and oats soften in the liquid.;)

    I have another friend who soaks hers in apple juice and another who, every evening, stews whatever they have left in the fruit bowl, then mixes that with muesli for breakfast the next morning.

    Your ingredients are a bit out on the sugar and marg (extra oz of each needed ;) ) and I already posted it on the recipe board here earlier :p:)

    Thanks for the recipe - I think there's a different sponge recipe for every microwave on the planet. Mine is slightly different to Curry_Queens too - it has extra flour...

    ..which is why I posted the Suet Pud recipe instead :)

    Do you have a Weyvale Garden Centre anywhere near you Mary? They sell "James Greaves" products (very expensive!) but - they often have them reduced with a reasonable few weeks shelf life. I pop to ours on a regular basis purely to see what is reduced! Purchased some gorgeous-to-die-for "luxury" dried fruits from there for less than £1 (500g bag) and the "best before" is ..... NOV. 05!!!!! Couple of blasts on the pulse button of the food processor and voila! I've mixed them with an El Cheapo bag of sultana's (Smartprice) to even the balance LOL We bought some nuts and sunflower seed kernals too, but they've mainly been used up now and what remains are in plasi boxes so I can't remember the deal I got on those. Worth looking for next time your passing - you never know! ;)
