bread pudding with out mixed fruit

does anyone have a recipe for bread pudding that doesnt use mixed fruit (raisins ect) sorry but i dont like mixed fruit so could we subsitute say apple or pineapple ?

any idea's anyone

    Hi there jenster....

    You can make it where you spread marmalade, jam on the bread instead of using fruit....and i have even seen it done with chocolate spread :D

    I think pineapple may make the custard bit curdle/split a bit....but it would still be edible...

    Im sure you will get lots more answers soon

    Delia has a delicious recipe for marmalade bread and butter pudding. She also has a lovely pudding called apple and orange crunch in her complete cookery book. You brush bread with butter then use the bread to encase a filling of apples with orange zest, juice and sugar. Not a bread and butter pudding as such but definitely worth a go.

    I would have thought that fresh fruit would work fine - Delia's recipe for Bread Pudding (with Brandy Cream!!!) has you soaking the dried, mixed fruit .... which would reconstitute it, to a "near" fresh state. But I would be careful with the liquid content if using fresh fruit - pineapple, in particular, contains a lot of water (juice).

    Have you thought about using other dried fruit, rather than the usual raisins? Cranberries?

    Why not experiment and give us a new, exotic bread pudding recipe? :D

    OH only used sultanas in his Bread pud, (NOT bread and butter pudding) if I have the chance I soak them in Tea for a couple of hours before he uses them
  • pineapple and its juice has an enzyme that would prevent the custard form cookign properly, but you could make a plain bread pudding and add eh pineaplle cooked into a sauce when you eat it.

    Cooked apples, apricots, plums etc would all work in that delia recipe where you sandwich a filling between the bread slices.

    Or Bread & Butter Pudding?

    i make it savoury sprinkling cheese and slices of tomatoes in between and then add the milk and eggs etc. sometimes add fried leeks or courgettes anything i have left over. whenever i reach a crust we put it in a bag inthe fridge then make one when the bags full. serve with salad!
