homemade mayo - how long does it last?

Thanks Squeaky (my thanks button doesn't work at home!)Wonder how they pasteurise them? I thought pasteurisation involved heating to a really high temperature (i.e for milk products) which would cook the egg.Pleased that I can now go off and make my own mayo without worrying that I'm going to kill someone!0

I have no idea.
We used to get pasteurised egg in pallet sized containers of a ton each. Up to eight per day - and that makes a LOT of mayonnaise!

Does anyone know if it's possible to freeze HM mayo? I was inspired by reading this thread and so decided to make some. I now have some leftover which wont be used within the 3-day period, so wondered whether I could mix it with tuna and freeze for sandwich fillings. Anything to save wasting it!
Also, any ideas on how to make a 'light' (as in lower calories) version?0 -
No, it doesn't freeze very well at all. Breaks up on defrosting and never tastes the same even if you whizz it again.
We used to do a low cal one...
I think it used less oil, added more water, and I know for sure that it then needed arrowroot to thicken it. There were 60+ different recipes and it was ten years ago, so I can't help further.
