Why is the credit card security code secure??

The security code on a credit card (CVC2, CVV2 etc...) is supposed to make transactions more...erm...secure. What is it about this code that makes it any more secure than the credit card number on the front? When you make a payment, you have to provide the number and the security code. As above, the main difference is that it's not stored on the magnetic strip, so someone who skims your card won't get the CVV.

I also put a small sticker over the CVV, this stops someone in a shop from photographing the bottom of your card, which is a trick used more often these days. One that easily peels on and off works great.
