Self Employed or Unemployed? (Car Insurance)

I was wondering when you are actually classed as self employed by car insurers? I am currently on income support, having left two previous jobs due to my disability. I am able to work, but they are helping me find something that can work long term.
I have recently started doing some eBay re-selling (buy low, sell high) and keeping track of what I'm earning to submit to the tax man, which is then deducted from income support, but as my main source of money will most likely still come from income support for the foreseeable future, do I have to put unemployed on my insurance? There's a pretty huge difference in price, exaggerated by the fact that I'm a young driver.
I'm very wary of insurers after having my last policy cancelled after leaving my job as a Barista (they requested proof of income around a month afterwards, first time I've ever heard from an insurer). They wanted to raise my policy from £1200 to £3000!!

Whilst I was off work on sick pay my insurance was due, I queried on the job ttitle/description and was told that if i was in receipt of benefits like job seekers or income support then I was unemployed.
As i was on sick pay with my position still open and receiving payslips then i just continued with my normal occupation.Censorship Reigns Supreme in Troll City...0
