What are some easy tasty and healthy meals?

I made nut burgers the other day they were a great success.

I don't eat cheese due to fattyness.

Anyone recommend any other easy cook healthy stuff?

Pasta I really like but it doesnt feel complete without cheese :( I havent found a good recipe for it yet that I like without cheese.

Curry I have all the time.

I need some new ones.

    Spicy Spring Rolls.

    I usually buy the spring roll / won ton wrappers from my local Chinese supermarket, but both Tesco and Asda sell them also. I vary the filling ingredients, depending on what I have available at the time, but usually along the following lines:

    Prawns / chicken (uncooked or leftovers)
    Beansprouts
    Hot Chillis
    Spring Onions
    Thinly sliced carrots

    I marinate all of the ingredients for a few hours in a mixture of soy sauce, ground black paper and garlic, and then just wrap them up, and freeze what I don't use straight away. Although they're usually deep fried, you can put them in the oven for a healthy option.

    Jacket potatoes, especially if pre-cooked. When you have the oven on for something else, put in a few large potatoes to bake. When cold, store in fridge. When you want a meal, take one out of the fridge, reheat in microwave, add your choice of toppings (grated cheese and chives, baked beans, tuna, whatever) chuck a bit of salad on the side and Bob's your uncle!

    stir fries - quick and healthy if you fill with veg.
    My spag bol has quite a low ratio of mince to tomatoes so that is a healthy choice - and some of it usually becomes chilli along the way.
    Rice pilaff - I use 4oz of rice for 2 people (my standard portion size) but there is always enough for 3 once it is made - and it is packed full of veg

  • crispy bacon bits are a good substitute for cheese on pasta, and you could trim the fat off and dry fry it.

    I like easy meals, don't like faffing in the kitchen. I've just eaten two bowls of vegetable stew, had to have a second one it was so delicious. I got a big pan, chopped up a load of veg, potatoes, brussels sprouts, cauliflower, carrots, sweet potatoes and onions. Added spices, and porridge oats to thicken it. No cooking for the next two days as I shall be zapping it in the microwave. All good healthy food.

    This is very simple, but tasty.

    Boil spaghetti to your liking, whilst this is cooking fry some garlic, breadcrumbs in olive oil, add a bit of chilli if you like a kick and some salt and pepper then drain the spaghetti and toss in the olive oil mix.

    The mix of the crispy breadcrumbs, the flavoured oil and the soft pasta is really savoury, quick and tasty :)

    Don't dismiss cheese based on one arbitrary figure "fat". Indeed, many give it up in a diet, but there's some science that proves you should have some cheese daily in order to lose weight ... it does something hidden/magic and, even though it's got fat and calories, it somehow manages to help aid weight reduction.

    Cheese is therefore being given a bad name for something that might be irrelevant.

    A matchbox size of cheese/day, grated (so it looks more) could really perk you up.
