Kitchen worktop - Matt vs polished finished

I’m looking at getting a real wood worktop in my kitchen. I’m currently looking at Iroko wood but when Googling for examples I really hate the look of it if it has the polished effect (fig 1 below). If however it’s the more ‘matt’ version of the wood (fig2 below) I really like the look of it.
I know you need to keep the wood oiled in order to help protect it. Is that what gives it this shine or is that something else?

Osmo polyx oil is good stuff. I would google Osmo Oils and look through the different oils they do but you can get polyx oil in matt and semi satim, gloss etc. There are plenty of companies online so shop around. They also do a "Osmo Top Oil" which is also good on worktops and comes in a Matt finish.
