Making something different

Options
Was searching around Recipezaar the last few days and came across this recipe Crockpot Cola BBQ Pork. Made it in the slow cooker yesterday although I didnt cook it as long as the recipe stated. Served it for tea with coleslaw, sweetcorn and jacket potato and it was fab. It reminded the kids of eating out in Florida. I wasnt too sure about cooking it in coke but I have to say it was gorgeous and the pork shreds up really easily. First time the slow cooker has been used since the winter.

Today I'm making Quesadillas with the left overs and freezing the rest.

Anyone else making something different today?

Nigella does a ham joint cooked in cola and I must say it looks amazing. However as we are both trying to eat sensibly we try not to have too much ham, gammon or bacon.

I buy (cheaper than gammon) ham shanks and do them a la nigella in coke - really good.

My veg box comes later - this usually inspires me to do something different. Chocolate and courgette cake last week. Turnip gratin the week before. Who knows later ;)

I will be tomorrow if all goes to plan. I thinking of doing some haddock (bought some lovely loin yesterday) with fresh tomatoes, onion, garlic and herbs and then making like a gratin with potatoes and maybe a white sauce.

As im making it up im just not sure whether the potatoes should be cooked at all first or whether they are ok raw and how long to cook the thing for in the oven. I think topping with sheese would be nice though :D

I usually buy shoulder of pork (I think) from Costco, just wondered if I could use this for this recipe?

I just call them lumps of meat (get two lumps in a pack for about £8), but I have cooked them in slow cooker before.

If I can, then I might give this a go at the wend.

Yes, I used a shoulder of pork from Tesco, cost £5.70 or so. Only just about squeezed in my 3.5 litre slow cooker but was fine. It was so easy with only 3 ingredients. I'm not a huge fan of BBQ flavour but for something tasty and different this was nice. The sauce I used was a Heinz woodsmoked one from Tesco.

Ok, here is the link again, in case it works this time

    http://www.recipezaar.com/43186

    1 pork roast
    1 1/2 cups cola
1 8oz bottle bbq sauce (your favourite)
    1. Cut all visible fat from roast, put in crock and cook 12 hrs (You could set this to cook all night) on low.
    2. Note: I pour a soda over the roast to give it a little extra flavor.
    3. Remove meat from crock and drain all juice from crock.
    4. Shred meat and return to crock add 1 bottle barbecue sauce and cola and cook 5-6 hrs more.
    5. MAKES A LOT!
    6. Freezes great.
In reality I used altogether nearly a whole bottle of coke, the small sized ones. After cooking in coke, dont forget to drain away the coke and fat and then add the bottle of bbq sauce, you also shred the pork at this stage. I didnt cook it for 12 hours, more like 8 and then an hour for the sauce.

  • I have made an alternative version of this as I didn't have any coke and the shops were closed!! I boiled a gammon joint in the juice from a can of apricots, a glass of orange juice a ham stock cube two bay leaves and a spoonful of black treacle along with enough water to cover the joint for around two hours then removed from the stock (reserve to make gravy) and roasted in the oven (cover with foil till 1/2 hour before end of cooking time) for another two hours, it was gorgeous, so tender and I would definitely make it again

after a couple weeks of enforced rest (translation: cold and the OH insisting on doing it all) I've got my cooking mojo back and this weeks has been lots of new things. i've cooked a risotto for the first time (although i've eaten it before, never cooked it before) and that was lovely, will be doing that again, it was so easy. Also bought some tinned mackerel and made gorgeous fish cakes from them. I'm going to buy more tinned mackerel to try to use it more often, its healthy stuff. tonight i'm doing Rick Stein's peas with onions, parma ham and olive oil from his Mediterranean series but using bacon bits from aldi instead of parma ham. Did a plum crumble last night too, to use up some plums, and that was gorgeous.

certainly makes a change from what i usually cook (chicken, or mince stuff, or thai green curry!)
