Coeliac disease and gluten free bread

Why is gluten free bread so awful?
Was thinking of getting a bread maker but what's the secret to good gluten free bread? Any I've had from the supermarket, the texture is just wrong. The bread falls apart and tastes like crumbly sawdust. How do you ever eat a decent slice of bread ever again?

Because gluten is the protein that binds the dough and helps to make the texture.

ETA: You may have to accept that you'll never get a 'decent' loaf of bread/bread roll/cake/brownie/biscuit again. Sorry. Don't know what I'm doing, but doing it anyway... :huh:0 -
I like Genius multigrain bread and that doesn't seem to fall apart though I only use it for toast have never tried to make a sandwich with it. Don't really like the other "loaf" style gluten free breads I've tried. For a sandwich, I go for something like one of the Bionic rye style breads and have an open sandwich but that is of course a completely different taste to a normal sandwich with bread with gluten. I have now and again tried to make my own gluten free bread using recipes from the internet but I'd have to say the results haven't been great, and before I went gluten free I was quite good at making bread if I say it myself0

If you can get free prescriptions, 6 loaves of genius bread count as 1 item according to the coeliac.co.uk website prescription foods list. I get it x2 for my dd. Mind you, it does then take up 3/4 of the freezer for a while!
Otherwise, I'd suggest using 10g yeast over the usual 7g, in the breadmaker.
I'm also coeliac, but rarely eat bread products now. In fact, when I keep of all grains, then I feel great!
Good luck in your quest for the perfect loaf.NST March lion #8; NSD ; MFW9/3/23 Whoop Whoop!!!0 -
I can't eat yeast, so I know the feeling. I have been through most in the supermarket, but they all taste like something in the bottom of a budgie's cage.
I have given up on soup, cos it's not worth it without bread.
It's proved to be a nightmare when on holiday and wanting to eat out, cos many places just do sandwiches at lunchtimes.0 -

Thank you all, I'm now in mourning for fish finger sandwiches on warburtons farmhouse white.0

M&S bread is very good - a seeded brown loaf and a poppy seed-covered white loaf. A whole galaxy away from the old-style "plastic" long life stuff. Sainsbury's pittas are great too.
...and for Madjock, I've seen GF fish fingers in Sainsbury's free from frozen section. Haven't been able to try them because I can't eat fish any more.0 -
The Warburtons/Newburn Bakehouse seeded farmhouse bread is decent enough - I get it for my mum when she comes over for a few day and I eat what's left when she's gone - I'm not coeliac, but both my mum and cousin are.
For cakes and stuff, I just use my normal recipes but use the Doves Farm gluten-free flour. Now free from the incompetence of vodafail0 -
I mostly follow the autoimmune protocol so no grains for me, and I can't even have gluten free bread as it usually has potato starch in it which makes me very ill. Have you tried coconut flour bread? It isn't quite the same as fluffy white bread but it is a good substitute - and doesn't taste coconutty. Or almond flour if you're ok with nuts? There are lots of recipes online. I generally find it's easier to deal with not being able to eat bread by just avoiding the whole sandwich issue. I have salads or meat and veg instead - and since you're only avoiding gluten you have thousands of options out there. It might be easier than eating second rate bread. With a little bit of effort you can have easily portable healthy varied options and make people envious of your amazing lunch rather than their boring ham sandwich! Even buying lunch in shops these days is easier with the focus on health and so many people being gluten free as a choice rather than necessity"I cannot make my days longer so I strive to make them better."
