OP, I lived in jersey for many years, where my OH was employed int eh financial industry. We also had (have ) pensions there.
There are plenty of trustworthy financial advisers there to choose from. The best way would be word of mouth, perhaps from someone with a pension they are happy with,.
But as said, int he mean time you MUST consult a solicitor who specialises in trusts (if indeed the money must be put into trust). And I think that becoming One of the trustees yourself is very wise.
And yes, you do need to read up by book and elsewhere about investing so you know the basics and can understand the suggestions for the money you will receive.

Chantellesquandry,
Although you haven't stated the nature of your son's disability, I was wondering whether Mencap might be able to guide you. They have a great deal of experience in setting up Trusts etc and would hold a list of solicitors/financial advisers experienced in this complex area. Even if your son does not have a learning disability, I'm sure they would be able to guide you.
I hope you find the help and support neededhttp://www.jerseymencap.org/

Thank you so much for all the advice - it is very very helpful.
I'm going to have a chat with some IFA's to get an idea of what their suggestions are. Trusts are not anything I know about - we are not a wealthy family where we would ever need to know this kind of thing so its a bit daunting and know that our local commission has little to no power over rogue traders!0
