Fitting a recessed drain cover (pics)

I'm going to be covering the ground down the side of my house with slate chippings. I have two manhole covers one of which needs to be repaired/renewed anyway as the plastic frame has come away.

How do I fit a recessed manhole cover in replacement? It will look a lot better as I won't have the metal lids anymore as I can fill the recess with the chippings.
I've looked at recessed covers online but when they are retro fitted it seems the level will be brought up too high. Here is a pic of the concrete structure of my existing drain. Looks like I will need to chisel this away to fit a recessed one. Would like to here any advice from people who have fitted the same. Thanks
