That looks like a Mira platinum shower and standalone controller - couple f dabs of silicone around plug fixings and you will be fine

Tanking integrity will not be compromised if they install valves into walls correctly whether timber stud or solid . Most premium brands such as hanshrohe come with sealing rings which are bonded into the tiling and tanking . Simple bar type joints should be siliconed around the pipes before fitting then stainless steel screws used to securely . Anchored into brickwork or timber sheets/noggins set into the wall

I would not consider profile less screens , needs to be fitted prior to tiling and worked around . You should retain expansion joins given you are not fitting top mounted bracing bars , wouldn't consider a raised step either on a opened ended enclosure - receipe for disaster whether tanked or not

Do you mean the glass or the controls?

The taps we're considering are the Arteform Flow wall mounted range. Will they be okay?

Do you mean the screens with hidden 'recessed channels'? If we wanted the most low profile look possible like this, what would you recommend for the screens and fixtures? (Our screens aren't ceiling height though).

Sorry, what does this mean? :(

Do you mean a raised step like this? Why would it be a disaster just out of interest?

    Thanks
