Santander PPI Claim rejected: How do I PROVE I wasn't employed at point of sale?

Hi folks! Hoping someone on here can help me out.

I submitted a PPI mis-selling claim for my Dorothy Perkins account card. I was given a piece of paper in store with two crosses showing where to sign, and told that the card included cover if for any reason I couldn't pay. All the sections requiring my details regarding employment status etc were left blank and I was a full-time student at the time with no work. My claim has been rejected by Santander because I wasn't "advised" to take the PPI and I didn't cancel the PPI later.

The rejection letter advises that if I can prove that I wasn't working 16 hours a week, perhaps with a letter from my employer, I may have a complaint. But as I wasn't employed, I don't have this.

Can anyone advise me on how I can prove that I was unemployed back in 2000?
