5% lamb mince - where to buy?

    +1 for find a real butcher & ask nicely.

    Failing that, a spong is a much underestimated kitchen gadget.

    Just brown the mince and use kitchen paper to mop up the excess fat.

    However, not an option if you want to make something like meatballs. In that case, I would probably substitute with 5% fat beef mince instead which is widely available and often cheaper.

    A quick online search indicates that Waitrose has lamb mince with 10% fat. Maybe you could try a mix of half lamb mince and half lean beef mince to lower the overall fat content?
