I've got it fixed on English UK three times in Options/Language, but still it wants me to spell words the US way, like favoured (favored) or words we use with 's' it wants to use 'z'. Is there any way to kick its butt and force it to spell properly?

It depends also on which language your document is set in!
If you receive a document from someone, or your template has been set up wrong for new documents, you may unwittingly have these in US English...0 -
And many words with a z are actually traditional English spelling.0

As others have said, you've probably got it set to US English somewhere - I would start by selecting your entire document and setting the language to UK English. (Review tab, language button, set proofing language, UK English)0
