Usb sata

Will one of these enables me to transfer data from a hard drive in a dead laptop? Do I need to remove the hard drive from the laptop to use it? Is this the kind of thing a novice could do?

yes that would do the job , you will have to remove the drive from the old laptop


however you could try getting something like this

after fitting in the case , and getting your info off the old drive , you could then format it and use it as a handy spare drive for keeping info etc on

There are youtube videos for removing hdd from most laptops if it isn't obvious how.
