Switching question

With one of the banks I am with I have two current accounts. One is used for bills and the other is the main account into which my pay comes. I use that account to fund the bills account and for general spending. I use the piggy banking technique to manage my money as I get paid weekly and most bills are monthly.
If I were to do a bank switch to a different bank would that bank request the existing bank to close all current accounts or can you specify which to close?
It is just I am thinking of switching each account to a separate bank to take advantage of switching offers.

Paid off the last of my unsecured debts in 2016. Then saved up and bought a property. Current aim is to pay off my mortgage as early as possible. Currently over paying every month. Mortgage due to be paid off in 2036 hoping to get it paid off much earlier. Set up my own bespoke spreadsheet to manage my money.
