How quickly do your credit scores change? For example if I cancel some unused credit cards today will it change today and therefore be different when applying for a loan?

Nope its not that instant, not lenders report to all 3 credit ref agencies, some might report to 2 or just 1. Maybe you should read the thread above this 1.0
