Thanks Jackie O.
My idea was to share ideas, I love a bargain and the achievement of creating tasty meals cheaply...
I am fortunate to have a large freezer and as I originally posted, my idea is to use what I have in there (and my fridge) along with only ys items to create tasty dinners over a month
I do have a large freezer so I realise I am fortunate there.
With regards to the "Big Burgers", I make my own.
I am a huge lover of mince (beef, pork, turkey etc..) So many ways to use it, I use beef mince the most.
If you would like to know my home made beef burger recipe:
Really simple:
Beef mince (not extra lean, burgers need a good amount of fat)
Salt
Pepper
The secret is to chill them before freezing, after adding the salt and pepper to the mince, I roll them into ball and then flatten into patties. Pop onto a tray and chill in the fridge for at least half hour, Then get some freezer bags and some squares of greaseproof paper, take out the burgers, put a square of greaseproof between each burger, pop into the freezer bag. I freeze either 2 or 4 at a time.
I am also a huge fan of dried herbs and spices to help transform "ordinary dishes into something special. Sometimes successful, sometimes not, but I have a few old favourites I use time and time again.
Another favourite using mince is meatballs, again really simple:
Beef and Pork mince mixed together with
Salt
Pepper
Dried Rosemary
Roll into small balls.
I thought it may be interesting to take an inventory as to what is currently in my freezer if folks would be interested?0 -
Since my original post I have only purchased two further ys items so far... From Asda Bag of carrots 25p, large broccoli 20p.
On Saturday I took a spatchcock chicken out the freezer. (Purchased from Lidl a while a go was 30% off)
On Sunday we had the spatchcock with roasted new potatoes and salad.
Tonight we had (left over) Chicken and smoked bacon risotto. Using ingredients below:
Risotto Rice
Onion (reduced, bought from co op)
Garlic (from fridge)
Smoked bacon (from fridge)
Broccoli (small florets, purchased from Asda)
2x chicken stock cubes (mixed into 1 1/2 litres of boiling water)
Dried mixed herbs
Pepper
Left over spatchcock chicken
Whilst cooking this, I have also made tomorrow's dinner:
Chicken Pie. Ingredients below:
Puff Pastry (took out of freezer tonight, will use as a top for pie tomorrow)
Left over Spatchcock chicken
2x mushrooms diced (out of fridge)
Diced white onion (reduced bought from Co op)
Garlic (out of fridge)
Dried thyme
Veloute sauce for the pie mix, using:
The juices left from frying the above, with a spoonful of plain flour adding a mix of: (whilst over the heat and the flour has had some time to cook out)
Milk and
The chicken stock I had simmering on the stove for the risotto:
The chicken pie mix is now chilling in the fridge awaiting it's pastry top for tomorrow's dinner.
This will be served with some of the ys carrots and broccoli....0 -

First time on this thread. I am a die hard YS shopper.
For lunch I saut!ed 1 sweetheart cabbage (2p) and 1/2 purple cabbage (1p). Seasoned with salt and pepper and a little bit of soy sauce. Yum yum.. And under 5p as well.
For lunch at work, I had two brown baps (out of a pack of 4 for 2p) wit left over cheese and a spoonful of @ldi's own brand mayonnaise. Yoghurt is 1 of 4 packs bought for 2p.
