Glut of swedes - help !

I have 3 swedes (from the veg box, one last week 2 this week) and I am the only person who will eat them in this house of 5 people :eek:
Need something a bit more imaginative than mashing them and freezing them in individual portions!
I already have a very swede laden veggie curry in the freezer for when mum visits.

    Where on earth are they from at this time of the year ?:confused:

    I'm the only one who likes them in our house too. I love them mashed with loads of butter and black pepper and crisply fried smoked bacon. Not very imaginative though. What about making a potato gratin -like Dauphinoise only with swede slices instead of potato ? You could put little pieces of bacon in the layers.

    My allotment swede patch is almost ready to lift....... so UK swede is certainly 'fresh and seasonal' at the moment

    :) I was only thinking that if they were UK grown they must have been harvested a long time ago.

    I make a lovely risotto with diced parsnip and bacon, you could try diced- very small dice- swede instead.

    Another thought -add it to a spicy chickpea stew with peppers and tomatoes for serving with couscous.
  • Those ideas sound lovely Thriftlady. I also would not have expected the crop to be ready this early, but something funny has been happening to the weather this 'summer'....

    Tonight, cubed swede will be added to my vegetable tagine, served with cous cous....yum!

    I do that ;) and if anyone says it looks a bit orange I say 'that's the cheese' -I generally add some cheese too.
  • I do mine in the autumn, as roasted roots. Chop into 2cm cubes, swede, parsnip, carrot, potato, onion. Add crushed garlic and a good slug of olive oil . Roast at gas 2 for an hour or so. Yummy with roasts.
