Is it possible that they're using the face-to-face meeting as an opportunity to verify your ID, and that's why they're insisting on it? (or have they already done that part?)

Tell her she is working for you, she is wasting time and you do not have to go and meet her. I have never met or visited a solicitor for the last 5 purchases. Put your foot down!

Sounds like they're just overworked and trying to slow things down. If you can't persuade them to put you at the top of their pile (be really annoying and they might be keen to get rid of you more quickly...) then probably not much you can do other than complain about it afterwards, as switching to another firm would be even more time-consuming.

I never saw or met my solicitor when purchasing my house and it was complicated (house auction) had not even applied for mortgage when I bought it. But solicitor dealt with paperwork had it sent to me - special delivery - guaranteed next day by 1.00pm - read, signed, copied and returned by special delivery so solicitor received next day before 1.00pm. Took 3 days all in.Mortgage slightly longer - dealt with all of paperwork myself, applied 11th Offerred 20th of the month, so was ready to go a week earlier than planned, only to be told seller's solicitor was not "ready" with all paperwork.

Special delivery only cost £5.00 each way - well worth it - for quickness and peace of mind.
Always have 00.00 at the end of your mortgage and one day it will all be 0's
