Meal Plans w/c Mon 3 August

Couldn't see a thread started this week - mods please merge if there is one

Its just me this week, I want to eat from stores as much as possible as money is tighter than usual.

I plan on only buying lettuce, toms and cucumber, 4 pints of skimmed milk and a small loaf of bread and some fruit - probably bananas.

In the fridge/freezer

Eggs
2 red peppers
2 x Breaded chicken kiev
1 portion frozen potato wedges
half a bag frozen oven chips
2 chicken breasts
500g pack mince
butter
frozen veg

store cupboard

box crackers
1 tin baked beans
1 tin tomatoes
1 tin chicken in white sauce
Flour - various kinds
cous cous
onions
rice
Jar curry sauce
stock cubes
olive oil
marmite
gravy granuals

Breakfast will be toast with marmite or egg or beans

Work lunches (4 days) will be cold chicken with salad, crackers & butter or cold chicken & rice (or cous cous) with onions/peppers/chopped fresh toms/cucumber (no microwave at work). Other 3 days - anything I can throw together from leftovers !

Dinners

1. chicken kiev, oven chips & salad
2. chicken kiev with rice/onions/peppers any other veg chopped & stir fried
3. Egg & chips with bread and butter
4. mince in gravy with oven chips & veg
5. mince chilli with rice
6. mince in gravy with veg & large HM Yorkshire pudding
7. chicken in white sauce pie with veg

There may be enough mince to do a few extra portions for the freezer. Not sure if any leftover pie will freeze - have not used the tins of chicken in white sauce from Ald! before

    Mind if I join you Skint? This is a tight week for us too - payday on the 9th so determined to keep spends as low as possible using up stuff already in. Envious of the Chips and Egg but trying to lose weight so not for this week!
    Monday - meatballs (YS) with homegrown cabbage and carrots in spicy sauce. Had this it was very nice!
    Tuesday - Smoked haddock (YS) in white sauce with new potatoes carrots and cabbage (may be a theme here?)
    Wednesday - Chicken drumsticks and thighs marinated in soy ginger garlic and lemon, wedges and salad with HM garlic bread
    Thursday - Pork sausage (YS) cooked with savoury rice
    Friday - HM Smoked mackerel fishcakes with mushy peas and mashed potatoes and last of carrots
    Saturday - HM Frittata with bits and bobs added from the fridge and the last of the potatoes
    Sunday - Butternut squash stuffed with chilli/rice with cheese

    Should only need milk, bread and yoghurt as have bananas oranges tinned fruit and porridge/cereals in.
