    I don't know about supermarkets, but in the store I work all transactions happen on the server not the till. It may only take a split second to sort and group the items but that would put extra strain on the servers.
    different stores operate different system of till/central server setups.
    If you are doing everything on a central server you are very much dependent on the network, and if it goes down your whole store stops.
    Getting things done on the till means everything can continue ( and data uploaded back to the centre when the network is restored )
