Extending a mortgage offer...

My partner and I are currently in the process of buying our first house. We've had a lot of hiccups along the way on the sellers side and have already had to pull out of one property. Having found another and having the mortgage reissued for the new property, we were under the impression that we would be completing and exchanging within the next week.
Today, we have been told that the sellers are unable to move out until the 10th of August at the earliest and this means that our mortgage is going to expire. We have been told that we can apply for an extension. Can anyone tell me what this entails? What do we need to do get the offer extended and what documentation is normally needed?
