    oooh real chips! lovely!
    or 'Nanny chips' as the grandkids call them. use real potatoes, you don't HAVE to peel them if they are the clean ones.
    cut them in half inch slices then cut them again to form chips.
    heat the fryer to 150 and fry the chips till soft. I use sunflower oil as I can taste corn oil and don't like it. don't use olive oil - it isn't as stable at high temperatures as cheap veg oil, sunflower oil or rapeseed oil.
    lift them out and let rest while the fryer heats to 170/180.
    drop them back in again and fry until they are as golden or brown as you like them.

    I recently gave my Deep fat fryer to my son - and went back to the old chip pan!
    Reason? the deep fat fryer was a bu99er to clean!
    the old chip pan is much easier to clean, although you do have to be aware its more of a fire hazard. but I was brought up with one - so know how to use it.

    Repeatedly heating oils to a high temperature causes chemical changes which aren't good for us. Some fats are worse than others -
