Installing internal wall insulation - correct method?

I’m just looking at installing internal wall insulation to an extension on a 300 year old house, where the extension is solid wall about 100 years old and will be the new lounge/dining area.
Looking around, the best method appears to be using solid wall insulation panels on the internal side of the external walls. More than capable of doing it myself, but there seems to be a great deal of confusion on the web over how these should be installed, and much seems to be dealing with any moisture issues.
Some talk about just gluing the panels straight to the wall and then plastering over the new inner wall. Others talk about building a wooden or metal frame work on the external wall to then fix the insulation panel to the framework to create an air gap between the inner insulation panel and the outer wall. Others say glue the panel to the wall, then build the framework for the air gap on the inner surface of the panel and then plaster board on that.
Any specialists out there who can give me some advice?

Done correctly they all pretty much work? If walls sound, flattish, least labour intensive, quickest (cheapest? )is insulated plasterboard dot dab or mechanically fixed (screwed etc) insulates and dry lines walls in one application, For less sound etc then timber metal stud etc does the same just cost more… Probably the biggest issue with insulating, double glazing etc is insufficient ventilation leading to condensation0

What is the exact construction of your solid wall, brick or stone, lime mortar or cement rendered externally with? Plastered internally? With gypsum or lime plaster? Does it have a DPC?0
