Problems at work

I think the difficulty in getting back pay for the time you were off is that you went off sick with stress. The stress may have been *caused* by work, granted, but if you had stress as a result of being overworked, for example, you'd still only get sick pay.
Had you turned up for work and been sent home unpaid - or told you couldn't work and had to be off - then I think you'd have a case for full pay for the time you were off. They can say you were sick, therefore they have complied with the requirements. It's also possible that being off sick meant that had no hurry to sort out your professional registration, as you were off ill.
Regardless, you can ask for full pay (and I think you should) and hope they offer something, but you don't know what's happened to the manager, so don't assume they haven't done anything. At the end of the day they mucked up your professional regs, which is probably because of a reason around admin / sending in forms etc (am making an assumption). You weren't bullied by this manager, or harassed, or treated badly on an ongoing basis - they were just bad in sorting out forms. So working for them again shouldn't be an issue, and hopefully this will never happen again.

KiKi' <-- See that? It's called an apostrophe. It does not mean "hey, look out, here comes an S".0

OP, its time to start thinking about what you really wish to do and whether your future lies with this organisation, particularly given the history. Your grievance was upheld, and could walk away without having blotted your copybook.
If you have ambitions elsewhere, it may be worth turning the compensation you are looking for into a severance package and leaving with your head held high.Value-for-money-for-me-puhleeze!
