Want 20mm quartz worktop hob says minimum depth of 30mm

I'm having a new kitchen fitted, the worktop I would like in a 20mm depth, however I've just checked the drawing for the hob which is a Bosch and it says minimum worktop depth 30mm.
Am I going to run into a huge problem if I go ahead with this one in a 20mm worktop? I can't figure what it is about it needing to be 30mm. Has anyone else with a 20mm worktop had a hob fitting problem?

You need at least 30mm thickness of worktop when sitting this hob above a built under oven. So if you have a cupboard or drawers under you should be fine, although a shallower top drawer might be needed if you are having drawers.
Could I ask why you want 20mm Quartz not 30mm? We tend to do 20mm Quartz on modern handleless kitchens and 30mm on more traditional ones.
And why are you having a gas hob and not an induction one? Also have you allowed enough room above the hob for the 'combustible free zone'?

Its a Nobilia N line in laser grey, so a really flat neutral colour, no handles. No oven underneath just a set of drawers. Unit is a NK2A80 if you are familiar with the range. So hopefully will be ok then!
Blanco Zeus worktop is what I want to go for, 20mm looks more pleasing to the eye to me.
Trouble is I like cooking on gas, I know induction looks better. I'm just sat here now looking at inductions in case this one wont work. Is there an 800 wide induction you would perhaps recommend. They seem to all be deeper than the gas hob the few I've just looked at?
Above the cooker I have a housing unit that is smaller in height than the run of units. 800 x 359 x 320 so should be fine. I'm looking at the Elica Sleek extractor, fits into an 800 unit. Still to shop round for this price wise.

Oh Nobilia kitchen then - can I ask where you are getting it from?
I would definitely go with induction in a modern kitchen, its far better in terms of responsiveness, performance and efficiency than gas, unless you do lots of Asian cooking. We do around 60 or so kitchens a year, half our customers I would say initially want gas but we demonstrate induction hobs to them and then maybe one or two a year keep to gas, everyone else converts to induction!
Don't think of it in terms of 'gas' or 'electric', think in terms of what you actually want, which I would say is controllability, responsiveness and performance at high and low heats. In all these areas Induction is way better than gas.
Would be very interesting to know where you are getting your Nobilia kitchen from and why you chose that make.
