Best way to save.

Hi there,
Looking for a little advice. I have been long term unemployed but have recently been given a new job. This new job is quite well paid and due to the fact I live at home ( had to move back as was unable to afford the rent on my own place) my outgoings are quite low. I would there for like to be able to start saving as soon as i start getting paid. I would be able to save around £300-£400 a month. I would like something that isn't instant access but also not something that is locked away for a long period just in case I need some form of access to it. Any advice would be very helpful. Thank you

Regular Savings accounts pay 6%,5%,4% and lower AER. Some allow access, some are locked for a year.
