A cake challenge!

I have 4 apples that are going soft and half a bag of pecans that need using so want to make an apple pecan cinnamon cake. Have some maple syrup (about 100ml or so).No butter, only soft margarine, have milk, 2 eggs, granulated sugar, icing sugar, brown sugar. Have baking powder, cream of tarter (what is that for?), vanilla extract.

No mixer so simple recipes that can be done using my a one determined woman with a hand whisk. And a 23cm cake tin.

Help please :D (would prefer soft fluffy cake as opposed to moist one)

It's been years since I baked a cake so a foolproof failsafe one will bolster confidence.

  • Just made a great bread and butter choocy cake tonight with a left over loaf - it was great! Not great at making things up but here goes.

    Do you have any flour - a 1 kg bag from Tesco's is v.cheap if not and lasts for ages - good to thicken gravies etc as well.

    1) weigh out 4 oz marg
    2) weigh out 4 oz sugar
    3) Mix together until creamy
    4) Add one egg and mix
    5) weigh out 4 oz flour (self raising)
    6) seive flour and add one spoonful at a time too the egg/marg/sugar mix
    7) continue until stiff - add some milk to loosen
    8) add the other egg and more flour mix thoroughly and add milk till you get a nice cake mixture - (by adding both eggs this should make it fluffier I think)
    9) roughly chop 3oz of the pecans and mix in
    10) add a teaspoon of the vanilla extract for flavour
    11) Grease your cake tin and put some grease proof paper in the bottom.
    12) Wash apples, core and peel and thinly slice them - then cover in brown sugar and leave for 20 mins or so to allow the juices to flow. maybe need to do this first!
    13) Pour cake mixture into cake tin - lay the thinly sliced apples over the top and brush with milk - or save an egg and use this as a glace.
    140 sprinkle with cinneman and put into a pre-baked oven for around 20 mins of until centre in cooked 9at about 160 - 180C) gas mark 4 i think!

    How about that at 11pm???
