Norfolk. I remember knobs of butter rough rubbed into some flour and salt & pepper, eggs and or milk to make a sticky mixture put it into a butter dish and cook until crisp on top and crumbly inside.

My Nanna who taught me how to cook was very old school cook, I think what you may be looking for, I may be wrong as we are from Lancashire, is one of the old ways of doing suet pudding, its a basic suet dumpling recipe, baked in a well buttered dish in the oven, it gets crispy on top and crumble underneath, Like I said I may be wrong as it is a bit heavier than a Yorkshire pudding, but you cut it up into slabs and serve it with gravy before you bring the roast meats out, that way you saved on roast meats and could make nearly a weeks worth of meals out of one joint hth
