    For me it's a mixture of:


    Spinach, rocket, raw broccoli, spring onions, olives, carrot, pomegranate seeds, sundried tomatoes, cucumber, mandarin segments, mozzarella, feta, brie, walnuts, falafals, quinoa, cous couse, cottage cheese, avocado, pumpkin seeds.


    I usually take my own dressing made from half balsamic vinegar, half OJ, with a bit of mustard.


    I usually take home made hummus with carrot sticks to dip in. (Chickpeas, pesto & lemon juice in a blender)


    So glad I found this thread, it's given me a few new ideas!

    just a note - if adding curry paste check its not one you need to cook first (some are inedible raw apparantly!), curry powder is usually better

    Don't know if anyone else has come across the book "Salad Love" by David Bez? He sets out his principles for making interesting salads, which includes a base layer, a protein layer, and interesting things on top, like chopped nuts or seeds or pieces of fruit - the book covers year-round salads, it's not just for summer. He's got a blog if you google him, and I've made quite a few of his recipes- one or two were a little odd, and I probably shouldn't have added kiwi fruit to the squid recipe...

    I love salads anyway but I do find tomatoes make them soggy. I really like couscous though - nice done in stock then served cold with chopped red onion, peppers, cucumber and anything you can dice that's crunchy. Add feta, tuna or cooked chicken. Oh, and the tomato works with this as the couscous soaks up the juice :T
    Bit of salt, pepper and lemon juice and you're good to go :)

    I've just got the book-saw it reviewed in the paper a few weeks ago. The blog is called Salad Pride .

    I like potato salad, made with potatoes and salad cream, with optional mixed herbs and chopped onions.

    And plain pasta salad of pasta and salad cream.

    Tuna/salad cream's nice too.

    Lob any/all of those into a lock/click box and job's a good 'un. Also nice to lob in a boiled egg.

    Great episode of River Cottage on the subject of packed lunch available on 4od , season 14 episode 6.......some inspiring ideas even the humble pot noodle gets a tasty, healthy and yummy

    My 15yo son who is currently on work experience has flabbergasted me for the past 2 nights by preparing a salad for his lunch the following day.:huh:

    He's spent the previous 15 years occasionally eating some of the salad garnish at the side of a plate. Lettuce and cucumber have barely featured in what he puts in, and tomatoes he only took once and then said not to bother again. He's started by grating a carrot, adding tinned sweetcorn, a very tiny amount of lettuce/cucumber so negligible it could easily be omitted. Then he's added chopped boiled eggs, cooked meat and HM coleslaw.
