Hmm you know some of these ideas are just divine... now I have time on my hands as of next week I might have to try some of your ideas folks

Chicken in port works for me every time! and its dead easy......
Slice mushrooms and dice onions and fry off in pan with a little bit of oil.
Chicken breasts coated in flour, brown them off and then add back in the mushrooms and onions.
Cook all together for about five minutes and then add 1/4 pint veg stock and a splosh of port (although I tend to get little bit 'some for the pan, some for me'!!!) and simmer until chicken cooked through but still tender.
At the end add 1/4 pint single cream and mix together, heat but don't boil.
I usually serve with either mash or baby potatoes and some broccoli and carrots and other veggies.
