Insurance quotes rocketed by £140 in 3 days - why?

This has probably been mentioned or discussed before, but it's absolutely made me sick.
Some provisions: I'm 27, have a Full UK license since 2009 with 6 years NCB. I had one accident that a claim was made on in September 2011 where the driver hit me from the side, I wasn't at fault. I also live in deepest darkest Birmingham, and I drive a 1.6 Peugeot 3008 diesel.
My car insurance ran out yesterday (25th June 2015). I had been shopping around about a week before hand. The cheapest quote I received was using Google Compare for £590. I did use MoneySuperMarket too, cheapest being with Bell Insurance at £605.
The problem I had was that pay day wasn't until today (26th June 2015). I pay monthly as I never usually have enough to cover it annually, and I didn't have enough money to make a deposit payment on any policy. So I decided to wait until today.
This morning I go through the process of having my quotes refreshed. I didn't change any of the details, just the start date of the policy. I went on Google Compare and MoneySuperMarket again.
Imagine my mood when Google says the same insurer who quoted me £590 now wanted £671 to insure me. Same for MoneySuperMarket, the cheapest insurer was still Bell but they now wanted £705! None of my details had changed during the last few days, only when I wanted the policy to start! It also transpires Bell wanted to fit a "Black Box" to my car, which I'm 100% against. So I ended up with the Co-Operative Insurance.
Because I was annoyed, I decided to go through the Co-Operative website to see if I could get it cheaper, or at least get the pressure washer! Again, same details as before - this time the quote was £1,330!
So, I ended up back on MoneySuperMarket and took the Co-Op deal through there. I'm now insured for 12 months on a policy that is about £50 cheaper than last years! (I know I pay monthly, I'm using the annual policy amount as a reference).
It's properly disgraceful, all that has happened in the days between getting the first quotes and today is that I needed the insurance to start today. I haven't had an accident, I haven't been caught speeding. I have took to the road and drove 200 more miles on various roads, I'm older, and I've that little bit more experience that 200 miles driving brings you.
How can they get away with this?
