Bulking out pulled pork

OH is trying to shift some weight, and I'm trying to introduce more veg to our diets as it is a bit lacking in green! My trick so far is adding them to our regular meals - we had a lovely homemade chicken curry last night that I bulked out with whole tomatoes, mushrooms and spinach. Going to chuck lentils and grated carrots into the bolognese I'm cooking later, extra kidney beans in the chili (thinking maybe chickpeas too - read a recipe yesterday) and so on.

I've got some pulled pork in the slow cooker today, and figured it's a good meal to add something in to - but I can't think what! I've gone heavy on the onion, which we're both fans of anyway, but wondering what else I could mix in. I'm thinking maybe spinach again - I've see recipes of pulled pork served with spinach - but it needs to be something that reheats well as most of it will be going in the freezer. Any other suggestions?

  • Chopped carrots celery and mushroom. Goes in most things I cook with onions and really bulks it out. DS, who hates all things veg doesn't even oic them. You could also add chopped peppers.

    Thanks - chucked some diced peppers and grated carrot in there, so we'll see how that goes down. I'll serve with mushrooms - can't stand the things myself so don't want to add them at this stage! If I add the spinach when dishing, I can see if we like it, can always add it next time.

    Stuffing would be good for bulking out cheaply, but OH wants to cut down on carbs and it's the veggies etc. I'm wanting us to eat more of, but thanks for the idea :)

    adding extra kidney beans to chilli won't cut down on carbs. Grated carrot or courgette can bulk out most spag bol/chilli type things. I put onions, peppers, mushrooms in most things.
    I think spinach would work nicely - just stir it through the hot pork

    How are you serving the pork?

    I find filling taco shells or pitta or wraps with lots of crunchy salad first then putting the pork on after, not only stretches the pork but ensures you get veggies. The sauce disguises the taste :)

    When I do pulled pork the only veg I add is onions, but I'd serve it with HM coleslaw, so you'd get onion, coleslaw and carrots in that.

    I'd go with the coleslaw too. If I want to get OH to eat more veg then I'll just put a sensible sized portion of something like pulled pork, and lots of extra veggies on the side - he loves meat so if I put it all out, it all gets eaten! I usually do things like homemade coleslaw (you can go for a vinegary one if you don't want all of the calories of mayo), homemade red onion pickle (just a bit of thinly sliced red onion, pinch of salt and bit of red wine vinegar) or corn on the cob (lovely with lime juice and fresh chilli and coriander if you're avoiding butter).

    Adding both frozen spinach and tomato is a handy trick for hidden bulking - it is extremely good at camoflaging itself as gravy.
