I think we could do with a close-up of the youngest leaves of all.
I think there are 3 different varieties of JK as far as I can make out. Well the one I spot rather more than I'm comfortable with of round here certainly has leaves that sort of curl in upon themselves a bit from side to side and that then open out as they get a bit older.
EDIT; try putting "Japanese Knotweed images" into google and you will get a lot of different images come up for comparison purposes.0 -

Believe me, I've looked at every picture of knotweed on the web and I'm still not sure. That corner borders two neighbours' gardens. I'm waiting for them to come home so I can have a look their side. The picture is the extent of it in my garden, so the likelihood is that it has come through from next door. And it's well away from the house.Je suis sabot...0

Yep that's JK. I moved away from a property that had a neighbour growing it in the garden like a shrub, on informing the council they were non committal in what would happen.
I had a lovely garden that was becoming infested and I was sick of pulling it up. I now know that it needs treating by specialists.0
