Hello all,
Just wondering if anyone here makes homemade ice cream?
As I have just bought an ice cream machine and the thing is that I like my ice cream really airy (ie lots of air in it) almost the consistency of whipping cream in a spray bottle.
Do anyone know of maybe a way I can do that with my ice cream machine? or a way of making the ice cream that will do that?
Just wondering if anyone here makes homemade ice cream?

I didn't have much time this morning to say any more, but I do have an ice cream maker, although haven't used it for ages (which tells me that I should probably get rid of it.) When I did use it, the ice cream was absolutely delicious, but no way could you say it was airy. The custard recipe ice cream was particularly yummy, and of course it's good for making sorbets.
I hope that you didn't just buy the ice cream maker with the only intention of making airy ice cream, as I just don't think that my ice cream maker certainly, would be up to that job.0 -
Depends on the ice cream maker. I have a simple one, and it produces nice creamy ice cream or smooth sorbets, but not "Mr. Whippy"0

Yep, I bought it as I want a Airy Mr Whippy sytle ice cream. I emailed the manufature and they said The appliances gives a very soft ice-cream, something different from standard creamy ice cream.
Soft I don't know if it means airy. I was talking with a guy whos a bit of an expert at ice cream making and he said its all to do with the ice cream machine on how much air is pumped into the ice cream. He said you get more for your money the more air thats pumped into the ice cream apparently.
Just hope that this ice cream machine makes airy ice cream, but will see soon.0 -

My ice cream maker does a soft ice cream too, but Mr Whippy it certainly isn't. However, I'm certainly no expert on the matter. I love Mr Whippy ice cream too, but luckily have never seen it here. Lol.0 -

I was thinking of maybe getting some double or whipping cream and putting it in a blender and adding some ice cream and then blending it up until it becomes very airy and fluffy? but would that work? Would that fill it with air? or is there a way to simply pump air into ice cream?

Make a meringue then fold in a 'lightweight' whipped dairy product (canned evaporated milk?). A blender blade would knock all the air out of your whipped egg whites, you would want a whisk attachment on a food processor or stick blender.
You may well already know thisbut if you whip proper cream for a little too long you end up with butter.

Hope someone can help?. Your suggestion of whipping cream will be an ice-cream as dense as any other once frozen; I have got the feeling that aeration is added when the ice-cream is in a semi-freddo state.
I have come to the conclusion that buying it is the only way around it, although it of course restricts flavour options. Yet I cannot get out my my head that the cheapest ingredient of the lot - air - is what gives soft whippy ice-cream its magical powers, something I saw on TV recently (was it SuperShoppers?).Value-for-money-for-me-puhleeze!

I use a Mary Berry recipe which involves folding in whipped egg white, as suggested by Fire Fox. Not sure you would describe is as soft and airy. The word I’d use is ‘delicious’.0

Have got an expensive something or other ice cream maker but rarely use it. For a bit of something cold in an ice cream sort of way I chuck a load of frozen fruit of choice into the Vitamix with cream and give it a whizz. Not ice cream but close enough!0
