So effectively, the UK is forcing other EU countries to buy in £ and other EU countries are forcing the UK to buy in € or their own local currency in the case of non-€ countries. The fact that there are some non-€ is something of an imperfection in a single market.
Yea true, but the free market (with UK included) only exists because we strongly rejected EUR. It may be an imperfection, but it is also a key component. I think that the implications of OP's intended outcome would threaten the ideals of this EU free market in its current form. The EU are in earnest that consumer trade should be possible across the EU as easily as across any one country. For example http://ec.europa.eu/growth/tools-databases/newsroom/cf/itemdetail.cfm?item_id=8169 is a public consultation on cross border parcel delivery services. While this is not quite the evidence you are looking for, it indicates that the EU is very much concerned to facilitate individual consumer transactions of the type that OP is interested in.
As far as I can see, that hasn't closed yet? Unfortunately not going to be much help for OP, but a good find.0 -

I don't think any of that threatens the single market.
Exactly right. The closest nation with the same shipping implications as the UK is Ireland and they pay the same product price as Germay + an extra 15EUR on the shipping. I'd like to pay what a bloke from Ireland would please, thanks.
Canyon have replied and asked for a phone number so they can speak to me.
I don't think I need full evidence of a former court case, this is common sense to single market pricing in my opinion. A strong challenge should hopefully be enough to get the UK pricing made fair at least for my purchase.
They claim they price differently for different markets, I would be willing to bet that there's only one of those that's priced differently within the EU and that's the UK.0 -
I had exactly this issue when I bought a bike from Rose a few years ago. I too tried and failed to pay the German price (plus shipping) in euros.
To be fair to Rose their £ prices seem to be direct conversions at the time the ranges are launched, so they don't seem to be systematically changing the UK more although currency fluctuations meant that I paid more.
Great bike from Rose by the way.
To the OP, how about a holiday to France to take delivery, failing that it looks like an opportunity for someone in Ireland to set up a business.0
