  • Hello, Pen Pin

This week is our first one of the holidays where we’re all at home. Want to be spontaneous with what we do, so I have a plan of food, and will decide day by day which days we’ll be eating it. We’re barbequeueing tonight, as it’s our 17th Wedding Anniversary. Sunday DH’ll be baking a piece of gammon in apple juice.

    Creamy courgette pasta
Summer veg and goats cheese puff
Fresh tomato, olive and herb pasta
Cold gammon with HG new potatoes and salad
Chicken and veg pie in HP flaky pastry

I’ll be feeding the Small Penguins a cooked lunch (omelette, toasted sandwiches, baked potato, pancakes). I have a pile of delicious fruit from the farm shop, and we have loads of plums, and apples are starting to ripen in the garden. There are also HM pasta sauces in the freezer if the weather turns colder. Will be baking a cake, some hob-nobs, and scones (for the clotted cream we brought back from Cornwall).

Helo Mrs Penguin, have seen lots of you talking about Hob nobs, is this a particular reciepe? would love to share it.

Today I am making the kids some "one slice is not enough" Fridge cake:

    you will need:

1 pkt Dig bisc (tesco value) 21p
    2 slabs choc 50p
    1 can condensed milk £1

    here's what to do:

Crush bisc ( with rolling pin in a bag if you have no mixer)
melt choc ( over saucepan over simmerring water)
add cond milk to choc , stir in well
    add bisc
can put in any tin you like , round, square , loaf tin et.c
    leave to set in fridge.
leave some choc to pour over the top

We have also sometimes added apricots , saltanas , or even some left over malteesers, what ever takes our fancy

I guess it isn't too cheep because of the cond milk but it is really yummy:T

    Happy baking all xx

Hi, I have been lurking but have decided to jump in.. thanks for all the ideas over the past few weeks!
    (We are vegetarian)
Saturday: Gratin Dauphinois (lots of potatoes to use up!), Courgette and tomato gratin
Sunday: BBQ with neighbour, veg kebabs involving halloumi, aubergine, yet more courgettes......, pittas, potato wedges
Monday: Curry with lentils and carrots, rice, raita
Tuesday: HM Hummus kebabs, based on something the local chip chop did when I was a student. Basically hummus+loads of salad (grated carrot and thinly sliced white cabbage, onion, tomatoes and chilli) in a pitta
Wednesday: will be getting low on veg by then, as our veg box people are on holiday for a week. Will probably have grated carrot, sauted with garlic, lemon zest and lemon juice, with pasta and parmesan
Thursday: courgette suprise (ie run out of ideas for the moment! will edit when inspiration strikes) - HM Pizza with whatever veg I can find (within reason!)
Friday: HM Macoroni cheese with added veg according to what I can find
I am going to try to eke (or eek!) things out until the following Wednesday, when we get the new veg box, will have to trawl through veg patch and freezer and see what I can use up (probably courgettes.....).

Happy Anniversary Penelope Penguin (and Mr Penguin of course) gammon in apple juice is lovely, I did one at Christmas.

Well another week ahead and I'm seriously lacking inspiration. I've got todays and tomorrows sorted as I've had to plan ahead because my oven broke, new one arrives on Monday. Right here goes, will go through freezer stock list and try to be a bit creative. I may need to switch days around, usually happens, but will try to stick to it to use up what we have in, alternatives for the kids always there when they can't/won't have what we are.

Saturday - Moroccan lamb with cous cous
Sunday - Chicken wraps (not point doing roast as DP will be back very late so will save it & do something easier)
    Monday - Sausages with something
Tuesday - Enchilladas and potato wedges
Wednesday - Bolognese (might turn into lasagne if the mice in the house leave enough cheese!)
Thursday - Sirloin steaks with peas, onion rings and chips/baked potato (grilled chicken for boys)
Friday - Fish night - prawn stirfry for me with rice and hm fishcakes for the boys, DP will be eating at work

Lunches is a variety available sandwiches, baked spuds, something on toast, soups, toasties etc. Fruit, fruit salads or yoghurts for deserts, might make an apple crumble on day for a treat as I've fancied one for ages.

Right now that's done I can sort through and do shopping list :D
One day I might be more organised...........
