BIG square gold Postage Stamps, do they always show the date + PO location ?

The big gold square stamps you see on letters, or provided by the post office,
like this one

is there anything different about them than the smaller stamps you can buy in a supermarket ?
(besides the size)
What is the advantage of using these compared to the older style (smaller) stamps, you get in a booklet?
and on these particular stamps,
do they stamp the Date + time + location
(as they have done above as 8/5/10, N1) ..do they stamp these details only on recorded delivery and special delivery items?
or they stamp the date/time/location on these stamps even if you send it 'ordinary' first class (even if it isn't recorded or special delivery).

The only time I've used these is when they're printed for me at the PO. I've never seen them for sale in advance in booklets etc. As long as you can measure and weigh your post accurately at home, why would you worry about using the usual ones you can buy?0
