How to prepare + keep cold boiled potatoes for a 'gathering'

Hi All,
Hopefully someone can help. How do we prepare, or more crucially, store cold boiled potatoes to serve at a family gathering. Ideally we want to just have plain boiled potatoes without mayonnaise or anything on them, so that people can add their own sauces etc. It will be part of a buffet.
I know how to boil them, but am not sure if they can be kept after they've been cooked without them drying out or going black.
We want to use potatoes from the garden, which are not 'new potatoes' - not sure what type they are, but will have to be peeled before boiling.

As long as they are cooked thoroughly, they shouldn't go black. In my experience he darkness comes upon them only if they are still raw.
I did read somewhere that adding vinegar to the cooking water works well.
They can be kept in the fridge for 24-48 hours without poisoning your guests!I am the leading lady in the movie of my life

I've found that if you keep the pots in the fridge cooked then a lot of them will go black. If you dress them in something acidic (eg mayonnaise or vinaigrette) they won't.0

How far in advance do you want to cook them? You could take them off the heat when they are almost ready and then just leave them in their water til ready to serve. The heat of the water will finish the spuds off nicely.0
