Probably Iroko rather than genuine teak which is 300% more extensive than Super prime quality European Oak. Iroko is much cheaper and was always known as "Poor mand Teak" because of the similar looking grain. Iroko timber has lots of bacteria in it so if you even get a splinter its more likely to go septic than other timbers..

Otoh, a family member had beech worktops and these had plenty of issues with damp, black areas etc.....don't think they look as nice as the darker species either.

Always puzzles me why people use Beech for kitchen worktops, its not durable and rots very easily. Colour wise its better to use Maple and even European Ash, still not great durability wise but far better than Beech. Most Beech worktops are made of Steamed Beech which is pinker in colour than unsteamed Beech.

I know its a kitchen and wooden worktops can get damp and can be wiped down with a damp cloth to clean them. However, it is not a good idea to let water stand on them or the wood will eventually turn black. They can take any kind of abuse (as they can be rubbed down) apart from heavy water damage.

I have exactly the same kind of worktop with the wooden grooves so thought I could be of help due to personal experience.

Not expert but wood needs loads of oil to stop it soaking up moisture I would have wood work tops but go for different sink or drainer . you can get a stainless drainer that drains underneath not into sink it cuts out .
Or other option is the duel work top wood then granite around sink or other option keep oiling the work tops .
